Our client, a luxurious 3 star property in Dublin North is urgently seeking a Senior Sous Chef to join the kitchen brigade. The job: Supporting the Head Chef in the daily management of the kitchen, and manage the kitchen in absence of the Head Chef, your duties will include: Work in all areas of the kitchen; Train Junior Sous Chefs, Senior Chef de Parties, Chef de Parties and Commis Chefs; Assist the Head Chef with reaching gross profit targets, purchasing, menu planning, rostering and labour costs; Keep daily HACCP records; attending weekly HOD meetings.

Skills Required

Recent experience as a Sous Chef (Senior) in a 3 or 4 star hotel is essential
